It's a large-volume pre-mixed that is packed with tastes associated with festive period, rendering it ideal for your celebration. Save the extra citrus syrup to use in morning drinks, sweets, or to mix another batch of bikinis.
Bikini Recipe
Serves 10 people
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
Making the Citrus Syrup: Combine the listed components into a pot, bring to a gentle boil, mixing until the sugar dissolves. Next, turn off the burner and leave to reach room temperature fully. Decant to a sterilised bottle, cap it and refrigerate it in the refrigerator, where it will keep for up to one month.
To make Premix: Mix every spirits and syrup into one large bottle, allow it to infuse for one hour, then strain , ideally through a fine cloth, making it fully clarified.
To serve: Add 85ml of the cocktail base to a mixing glass containing ice, and stir gently for about 60 seconds to cool it down. Strain to a chilled martini glass or similar, top with a few cranberries and complete it using a quick spritz of the essential oil over the drink.
